With only seven seats, getting a place at Tokyo sushi restaurant Sawada can be tricky, with some local sushi afficionados describing the Ginza restaurant as the toughest place to get a booking in the whole of the city. Those who manage to secure a reservation will eventually be rewarded with sushi of such high quality that it will likely forever ruin other sushi experiences.

Only two people work at the restaurant; the chef Sawada Koji and a single assistant. Sawada rises early each day to buy the best possible ingredients at Tokyo’s famed Tsukiji fish market and the sushi he creates is simple and traditional and shows a reverence to the raw ingredients – a hallmark of any good sushi chef.
